  1. In a large bowl, dissolve yeast and sugar in warm water. Let stand for 5-10 minutes, until foamy.
  2. In a separate bowl, whisk together flour and salt.
  3. Add flour mixture to yeast mixture. Stir until a shaggy dough forms.
  4. Turn dough out onto a lightly floured surface and knead for 5-7 minutes, until smooth and elastic.
  5. Place dough in a greased bowl, turning to coat. Cover with a clean towel and let rise in a warm place for 1 hour, or until doubled in size.
  6. Preheat oven to 475°F (246°C).
  7. Roll out dough to 12-inch circle.
  8. Spread crushed tomatoes evenly over dough. Sprinkle with oregano and salt.
  9. Top with mozzarella slices.
  10. Bake for 12-15 minutes, or until crust is golden brown and cheese is melted and bubbly.
  11. Garnish with fresh basil leaves and serve immediately.
