Vegan Lentil Soup
Ingredients
- 1 tbsp Olive Oil
- 1 Onion, chopped
- 2 Carrots, chopped
- 2 Celery Stalks, chopped
- 2 cloves Garlic, minced
- 1 cup Brown or Green Lentils, rinsed
- 6 cups Vegetable Broth
- 1 can (14.5 oz) Diced Tomatoes, undrained
- 1 tsp Dried Thyme
- 1/2 tsp Smoked Paprika
- Salt and Pepper to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
- Add garlic and cook for 1 minute more.
- Stir in lentils, vegetable broth, diced tomatoes, thyme, and smoked paprika.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until lentils are tender.
- Season with salt and pepper to taste.
- Serve hot. Garnish with fresh parsley (optional).
