Vegan Lentil Soup

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  2. Add garlic and cook for 1 minute more.
  3. Stir in lentils, vegetable broth, diced tomatoes, thyme, and smoked paprika.
  4. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until lentils are tender.
  5. Season with salt and pepper to taste.
  6. Serve hot. Garnish with fresh parsley (optional).
