1. The Right Pot is Crucial

Always use a large pot for cooking pasta. This allows the pasta to move freely and cook evenly without sticking. For every 100g of pasta, aim for at least 1 liter of water.

2. Generous Salting is Key

Salt your pasta water generously. It should taste like the sea! This is your only chance to season the pasta itself from the inside out. Use coarse sea salt for the best results.

3. Boiling Water is Non-Negotiable

Never add pasta to cold or lukewarm water. Wait until the water reaches a rolling boil before adding your pasta. This ensures proper cooking and prevents the pasta from becoming gummy.

4. Stir Initially, Then Let Be

Give the pasta a good stir right after adding it to the boiling water to prevent it from clumping. After that, stir occasionally. Avoid over-stirring, which can break the pasta.

5. Al Dente is the Goal

"Al dente" means "to the tooth" – the pasta should be tender but still have a slight bite. Taste a strand a minute or two before the package instructions suggest to find the perfect texture.

6. Reserve Pasta Water!

This starchy, salty water is liquid gold! Before draining, scoop out about a cup. It's essential for emulsifying your sauce, helping it cling beautifully to the pasta and creating a silky texture.

7. Drain, Don't Rinse (Usually)

Unless you're making a cold pasta salad, never rinse cooked pasta. Rinsing washes away the starch that helps the sauce adhere. The exception is for specific cold dishes where you want to stop the cooking immediately.

8. Finish Cooking in the Sauce

The final minute of cooking should happen directly in your prepared sauce. Add the drained pasta (don't worry if it's slightly undercooked) to the sauce, along with a splash of reserved pasta water. Toss and stir until the pasta is perfectly cooked and coated.

9. Sauce to Pasta Ratio

Don't drown your beautiful pasta in sauce. Aim for a balance where every piece of pasta is coated, but not swimming. The pasta should be the star, with the sauce as its perfect companion.

10. Serve Immediately

Pasta is best enjoyed fresh off the heat. It loses its ideal texture and temperature quickly. Have your guests seated and ready before you finish cooking the pasta in the sauce.
